{January 7, 2008}   New year, New possibilities

This January 2008 my husband and I decided to take the next step in our already evolved diet and go vegan! Yay! And eat only whole foods. No refined carbs or sugars here.

We have been vegetarian for about a year now and the health results are plain to see. We are feeling more healthy, have lost some weight, our workouts have gotten more intense and we have renewed energy and mental clarity.

Not only are veg*ns less likely to be obese, they also have reduced risk of heart problems, developing cancer and…well, just about every kind of health problems. I am pretty sure that it has to do with the strong cancer fighting properties of vegetables but I think you actually need to eat the veggies in order for it to work. Substituting meat for processed soy products or carbs such as pasta isn’t going to be providing you with many positive health effects. Duh!

Yes, veggie lasagna and pizzas are delish but should they really be a staple for modern diets?

I am going to be recording my meal plans everytime I get the chance. People can garner inspiration in my whole-food-vegan-diet log. I will also add little tips and health facts in my meal plans to help you make some changes every day to strive towards better health.
